
The Best Easy Grilled Salmon
Ingredients
2lbs of Salmon cut into 4-6oz fillets
1/4 c Olive Oil
1/3 c Soy Sauce
3 tbsp Lemon Juice
1 tbsp raw unfiltered honey
1 tbsp brown sugar
Pinch of dried parsley
4 cloves of Garlic minced
1 tsp Lemon Zest
salt and pepper to taste
Instructions
Make Marinade. Combine all ingredients into a large bowl. Mix well and pour into a gallon ziplock bag. (The new bags have that easy pour feature which is amazing)
Prep and marinade the fish. Cut salmon into 4oz portions (slightly bigger than the palm of your hand). Rinse and pat dry, then place in the ziplock bag and remove excess air. Refrigerate for 30-60 min
Cook the Fish. I like to cook my salmon on the grill on top of a sheet of heavy duty tin foil because the marinade gets everywhere if you don’t. Heat the Grill to 375 degrees. Spray the tin foil with olive oil spray thoroughly to prevent sticking. Place the salmon skin side down on the foil on the grill and grill for 8-10 minutes per side. The salmon should flake easily when finished. Be careful not to leave on the grill for too long or it will get very dry. Remove and let sit for 5 minutes before serving.

The Best Grilled Vegetable Mix
Ingredients
Vegetables (You can use any veggies you like but these are my favorites
Asparagus
Cherry Tomatoes
Red Bell Peppers or Small Sweet peppers
Onion
Sweet Corn on the Cob
Yellow Squash and Zucchini
Small cubed sweet potato
Other Ingredients
1/4 c olive oil or more if needed
1/2 tsp Salt
1/4 tsp Pepper
1 tsp Dill
1 tsp Garlic powder
1/2 tsp Parsley
Instructions
Chop Vegetables. Chop all the vegetables into smaller pieces (except the corn). You can cut them whatever way you want to however remember that cook times vary so things like the sweet potato takes a little longer to cook than a slice of zucchini. The longer cook time veggies, I chop into 1″ chunks.
Toss in Oil. Place 1/4 cup of extra virgin olive oil into a bowl and add seasoning. Once mixed, add the vegetables to the bowl and toss to coat
Grill Veggies. Place the Vegetables on the grill. I prefer to place directly on Oil sprayed rack, but you can put down tin foil and spray with Olive oil spray. Grill at 375-400 for approximately 15 minutes turning frequently.
Be sure to monitor for doneness and remove items that cooked more quickly then others.
