Today is a blah day. Don’t feel like doing much and it is chilly outside. I was poking around the internet looking for things to do to pick me up, recipes to try to incorporate into my routine, and other things to do that helps boost business. I was also working on a website, and doing some advertising activities, but I just can’t shake the blahs.
I thought I would post on the topic to get out what I can do for myself to get out of the funk and maybe it would help you in the same way or spark something for you to do for yourself!
Here are some of the things I found:
Chicken Stew Recipe – 255 calories per serving.
- Add potatoes, chicken, celery, onion, carrots, garlic, salt, parsley, thyme, pepper, and broth to a 4-6 quart slow cooker. Cover and cook on low for 4 hours or until chicken is cooked through and potatoes are tender (this could take up to 6 hours depending on the temperature of your slow cooker — cutting them smaller will speed up cooking time).
- Set slow cooker to high. Stir together cream and corn starch and stir into slow cooker, along with Parmesan cheese. Cover and cook another 30 minutes or until thickened.
- Serve immediately.
- 1 lb Potatoes , Cut into 1″ pieces
- 3 boneless, skinless chicken breasts, cut into 1″ pieces
- 1 stalk celery, chopped
- 1/2 medium onion, finely chopped
- 3-4 large carrots, thinly sliced
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 3 cups chicken or vegetable broth
- 2/3 cup cream or milk
- 4 tablespoons corn starch
- 1/2 cup shredded Parmesan cheese
Sounds amazing, right?? I’ll be trying this one. Or how about this next one…
Mango Salsa Chicken in the slow cooker – 160 Calories per serving.
- Place all ingredients in a 3-4 quart slow cooker and stir until evenly distributed.
- Cook on low for 4-5 hours or until chicken reaches an internal temperature of 165 degrees F. Shred and serve
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, diced
- 1 cup mild salsa
- 1/4 cup brown sugar
This chicken seems like it would be super versatile and so easy to make.
After my search for some healthy foods, I moved on to some motivating quotes because really, who doesn’t feel a little better reading what someone else wrote when they needed a little pick me up?

We either make ourselves miserable or we make ourselves strong. The amount of work is the same… Whoa, I mean, what a powerful couple of sentences! That is so true! I think that maybe we build up the pattern of making ourselves miserable that it becomes more second nature to us and in turn, it makes that seem like the easy path. If we turn around the thought patterns, it should make the opposite happen and seem easier.
Ok, feeling a little better now, and a little more motivated…
I then found this little tidbit:
Smiling naturally lifts the muscles in the face which slows the rate in which we age. I need to smile more. Used to smile all the time, that has faded into stress and frown lines. Good thing the facial products I am using will help me in the interim until I can shed the stress and be free again.
Anyway… There are a ton of cool things to find on the internet. What an amazing and time wasting invention. Just imagine what we can waste time on in the future! I have to say, however, the little surfing break helped get my mind right. I can now go get some stuff done.
